This is such a delightful departure from the norm for Pinot Grigio that it almost deserves its own category. Instead of a typical production of Pinot Grigio where all of the fruit is pressed immediately upon arrival in the winery, the fruit is divided into thirds and three different vinifications take place before the final wine is blended. One part was pressed immediately, a second part was allowed to macerate with the skins for a day, while a third part was allowed to rest on the skins and stems for nearly a year. The blended wine shows effusive nose of floral honey and summer meadows with a hint of vanilla. Ripe and open, yet bright and crisp with some positive tannins at the tantalizing finish.
